Red Butte Hatch Chile Beehive Cheese • Uintah, Utah Tim Welsh and Pat Ford joined forces in 2005 and began making cheese from pasteurized Jersey cow milk supplied by local dairies. In this cheese, New Mexican Hatch chiles are mixed into the paste for a mildly spicy, grassy flavor that brings out the floral and savory undertone in the buttery, cheddar-style cheese. Red Butte pairs with pale lagers, sweet white wines or a square of dark chocolate.
Alpha Tolman Jasper Hill Farm • Greensboro, Vermont Jasper Hill Farm is a dairy project hatched by brothers Mateo and Andy Kehler, with their small herd of Ayrshire cows. Alpha Tolman is created using traditional Alpine methods of cooking and pressing the curds to achieve a tight, elastic texture and robust flavors. The wheels are washed with a cultured brine and aged 8 to 12 months, resulting in a cheese with bold meaty flavor and a rich crystalline texture.
Pimento Cheese Spread Zingerman's Creamery • Ann Arbor, Michigan Zingerman’s award-winning cheesemaker, John Loomis, crafts this version of a traditional southern cheese spread using aged, raw milk cheddar ground coarsely with slow roasted red peppers, black pepper, mayonnaise, and just a touch of cayenne to make it dangerous. It is great on a bagel, cracker, burger or swept in your mouth on a rib of celery.

Shipping Policy & Rates
Due to the perishable nature of cheese and our standards for the quality of our cheese, we ship via FedEx Overnight Monday - Wednesday. Please note the selected ship date is an estimated ship date. All orders will arrive within the selected week on Tuesday, Wednesday or Thursday.
Each cheese collection is boxed and shipped individually. Shipping charges are determined by the weight of the collection. Most of the collections weigh less than 5 pounds and we will ship those anywhere within the Continental United States for a flat rate of $18. There is an individual charge for each collection that you order.
