Estero Gold Reserve Valley Ford Cheese • Valley Ford, CA Family-owned and operated since the land was purchased in the early 1900s, Valley Ford Cheese’s farm began producing cheese in 2008 with the goal of paying homage to the family’s Swiss-Italian roots while showcasing their fantastic Jersey milk. Estero Gold Reserve is made from raw milk and aged for about 16 months, giving the cheese a hard texture and sweet flavors of fruit that are reminiscent of Parmigiano. Rich and buttery, this cheese is great for cooking or serving with salami and some crusty bread.

This Gruyere is made just northwest of Lake Geneva in Western Switzerland. Aged in caves where the air and natural bacteria endow the cheese with a deep complexity, this cheese matures for at least a year. It is smooth in texture and has rich, beefy flavors that are tempered by hints of apples and pears. Famously used in fondue recipes, this cheese melts fabulously and is amazing in grilled cheese sandwiches, gratins, sauces or just for snacking.
