This collection is a real beauty featuring the mixed cow's and sheep's milk Blackstone, a deliciously spreadable goat cheese, and our own sweet and spicy Devil's Gulch!

Devil's Gulch

Our silky winter cheese starts with organic Jersey milk from Bivalve Dairy. These rich, bloomy rind wheels are encrusted with sweet and spicy ground heirloom peppers grown at Allstar Organics farm in Nicasio. The cheese offers a bright, sweet spiciness tempered by the rich creaminess of the paste. Devil’s Gulch is named for the narrow ravine carved along the base of Mt. Barnabe, just down the road from the farm.

Blackstone

Cindy Callahan began raising sheep as a way to keep pasture grasses under control. She soon began milking her flock, and before long, her son Liam joined her as cheesemaker. Blackstone is a blend of sheep and cow milk. Its paste is scattered with black peppercorns, giving it a mild boost of spice and its rind is rubbed with ground pepper, rosemary and vegetable ash. The paste offers the characteristic tang of sheep’s milk, while the cow’s milk offers a caramel sweetness and a rich mouthfeel.

Smoked Sea Salt & Rosemary Goat Cheese

Marinated goat cheese was a staple in Gerard and Susan Tuck’s Australian home for many years, a much-loved ingredient for any barbecue, dinner party or meal. They were inspired to create a unique range of marinated goat cheeses in the United States, drawing on the abundant farmlands of northern California. Chevoo is made from small cubes of pasteurized goat cheese that is gently blended with smoked sea salt and cracked pepper and marinated in a rosemary-infused EVOO blend. It’s perfect for slathering on bread, crumbling over salad, or melting into grilled vegetables.



Shipping Policy & Rates


Due to the perishable nature of cheese and our standards for the quality of our cheese, we ship via FedEx Overnight Monday - Wednesday. Please note the selected ship date is an estimated ship date. All orders will arrive within the selected week on Tuesday, Wednesday or Thursday.

Each cheese collection is boxed and shipped individually. Shipping charges are determined by the weight of the collection. Most of the collections weigh less than 5 pounds and we will ship those anywhere within the Continental United States for a flat rate of $18.  There is an individual charge for each collection that you order.
