St Patrick's Day signals the beginning of spring, and the arrival of our seasonal St Pat cheese. Gather your lads & lasses, grab a pint of Guinness and enjoy some of our favorite springtime-inspired cheeses, whiskey salami and oatcakes.
St Pat Cowgirl Creamery • Petaluma, CA Our spring seasonal cheese, St Pat, has a distinctive green rind that commemorates the arrival of spring in Marin County. Made with single-source, organic Holstein milk from John & Karen Taylor’s Bivalve Dairy, these rich, creamy wheels are wrapped in wild nettle leaves harvested by Paradise Valley Farm in Bolinas. The nettle leaves, which are frozen to remove the sting, impart a light, smokey artichoke flavor. The resulting cheese is mellow, soft and full of flavor.
Goldette Tommette Bleating Heart • Tomales, CA In 2009, Seana Doughty opened her own creamery, Bleating Heart, and began making sheep’s milk cheese in the cooler climate of the Northern California coast. Goldette Tommette is made from the rich raw milk of a single small herd of Jersey cows who live and graze on the rolling hills near Tomales Bay. This simple but flavorful cheese has a creamy mouth feel, an earthy aroma, a buttery tang and, as the name suggests, a golden paste.
6-Month Cheddar Shelburne Farms • Lake Champlain, VT Since 1980, Shelburne Farms has made artisanal, Vermont farmhouse cheddar, using only the raw milk from the farm’s herd of Brown Swiss cows, which graze on grass and clover. Aged for six months, Shelburne’s 6-month cheddar is their youngest, most versatile cheddar and has a supple texture and delicate flavor with notes of butter and fresh cream. This cheddar pairs well with a pale ale or a dry, European-style cider.

Shipping Policy & Rates
Due to the perishable nature of cheese and our standards for the quality of our cheese, we ship via FedEx Overnight Monday - Wednesday. Please note the selected ship date is an estimated ship date. All orders will arrive within the selected week on Tuesday, Wednesday or Thursday.
Each cheese collection is boxed and shipped individually. Shipping charges are determined by the weight of the collection. Most of the collections weigh less than 5 pounds and we will ship those anywhere within the Continental United States for a flat rate of $18. There is an individual charge for each collection that you order.
